No Bake Chocolate Cake (Vegan, Gluten-free)

I’ve created quite a few no-bake-cakes already – but not a chocolate version. With my love for all things chocolate, it is a bit unusual 😉

I’ve tried this cake with and without a banana in the filling – and I do prefer the version without it. Banana is quite strong in its flavor and covers the chocolate taste.

The glazing is meant to be all cacao – I ran out of it while doing the cake on the photos and used some additional carob – this makes it quite dark and less ‚raw‘.

Vegan Gluten-free No-Bake Chocolate Cake

For a 23cm spring form you’ll need:

For the base:
1/2 cup (75g) almonds (soaked in filtered water for at least 6 hours and then drained)
1/2 cup (75g) sunflower seeds (soaked in filtered water for at least 6 hours and then drained)
1/2 cup (70g) dates
1/4 cup (30g) FAIR-TRADE cacao powder

For the filling:
1 1/2 cup (210g) cashew nuts (soaked in filtered water for at least 6 hours and then drained)
1/2 cup (100g) coconut oil
1/4 cup (60g) coconut butter
1 cup water
1/4 cup (30g) FAIR-TRADE cacao powder

For the glazing:
1 cup (140g) dates
1/8 cup (30g) coconut oil
1/8 cup (30g) coconut butter
1/2 cup water
1/2 cup FAIR-TRADE cacao powder

Preparation:

For the base, blend the almonds and sunflower seeds to crumbles and transfer to a medium sized bowl.

Blend the dates to a gooey clump and add to the bowl and mix well.

Add coconut oil and cacao powder and give it a good stir.

Transfer the dough to the spring form and spread it evenly with your (clean) hands.

Place the spring form in the freezer while preparing the filling.

For the filling blend all ingredients to a fine cream, adding cacao powder at the end of blending process.

Take the spring form out of the freezer and pour in the filling. Spread it evenly and put the tin back into the freezer.

For the glazing, blend all ingredients to a fine paste, adding the cacao powder last. I like to let the dates soak in the water before I blend them, this way it is easier for the blender.

Take the tin out of the freezer again and spread the chocolate glazing evenly on top (and if you enjoy sprinkling stuff, you can sprinkle some sesame seeds on top – as seen in the picture).

To let the cake set, place it the freezer for another 2 hours or so.

    Oh mann, deine Rezepte sehen allesamt absolut großartig aus!
