Blueberry Banana Muffins (Vegan, Gluten-Free, Starch-Free, Gum-Free)

I have already created a similar recipe before. But this one is without any starches or gums – and with whole meal only.

When I first started into the gluten-free world, I believed that you need starches and gums to create a good result. But now I think you only need these kind of ingredients if you want it to look like a typical baking product that has been made with white sugar and white flour. That has never really been my thing. I don’t mind to bite into a piece of cake that has the color and texture of whole grain. It’s much better for you anyway!

I have used bananas for sweetening, no other sweetener needed. And with fresh blueberries it seemed to taste even better – perfect for the season of these yummy little health-bombs (hint, hint, if you live in NZ it is now!) 🙂

Vegan Gluten-free Blueberry Banana Muffins

For 6 muffins you need:

1 cup (130g) sweet sorghum flour
1 cup (135g) brown rice flour
1 heaped tablespoon fibre husk
2 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt

3-4 very ripe bananas (approx. 600g with peel)
1 1/4 cup (approx. 190g) blueberries
2 tablespoon olive oil
1 cup water


Preheat the oven to 190° C.

Mix the dry ingredients in a medium sized bowl.

Peel the bananas, cut them into rough chunks and put them into a small bowl. Mash them to a fine cream.

Line the muffin tray with paper cups if wished.

Pour the mashed bananas, water and olive oil into the bowl with the dry ingredients. Mix well but not too long. Then quickly stir in the blueberries. The dough should be pretty wet so that it is almost runny. If it is too dry, add a little more water.

Scoop the dough into the muffin form. It might seem like it is too much, but you can scoop little mounts on top.

Bake in the oven for approx. 25 minutes. This depends on the oven type, make a needle test!

If the tops get brown too quickly, cover it with a loosely placed sheet of aluminum foil.

Let cool down a little before taking out of the form.

If you make them in paper cups, let me tell you that I find they are easier to take out of the paper on the next day when they cooled down and settled well.
