When I was kid, my mom would sometimes make me this nice chocolate pudding, especially when I was not feeling well. I always loved it! It has something special about it that no supermarket pudding can give you.
When I grew up, I realized that there wasn’t too much needed to make this treat. In Germany, you can buy ready made packets which only need sugar and milk added.
But I decided to do it completely from scratch. You actually don’t need that many ingredients. Once again, cashew nuts are the essential part. How did I manage to live without them? 🙂
For 2 very hungry monsters or 4 humble portions you’ll need:
1/2 cup (approx. 60g) cashew nuts soaked with 1/2 cup water
3/4 cup (approx. 80g) dates
1/2 cup water
2 heaped tablespoon FAIR-TRADE cocoa powder
2 heaped tablespoons cornstarch flour OR potato starch flour
1 1/2 cup water
Preparation
Blend the soaked cashew nuts with the dates and additional 1/2 cup water until they turn to a very fine paste (for me the personal blender works best here).
Pour approx. 2/3 into a medium sized pot.
Add 1 1/2 cups of water to the pot.
Add the cocoa powder and corn starch to the remaining blended dates and cashews. Mix it well.
Then bring the cashew-dates-mixture to boil, stirring it constantly.
Once it is boiling, take it off the stove and pour in the cocoa-date-cashew-mixture. Don’t forget to flush the blender with a little water and add it to the pot as well.
Stir well and bring to the boil again. Let it cook for 1-2 minutes.
Then let cool down a little and transfer to the dessert bowls.
In winter I’ll eat it straight away and in summer I always chill it before serving.
