Chocolate Ice Cream with Chocolate Sauce (Only 5 Ingredients, Vegan, Gluten-free, Nut-free)

CHOCOLATE! Yes, this recipe is owed to chocolate, the goddess of comfort and happiness 😉 It is basically a blend of two recipes that I’ve made a while ago.

The good thing: it works with or without an ice cream maker and you don’t need to do any involved prepping. No cooking, no roasting, no heating up. All you need is just a very good blender and a freezer 🙂

I have used cacao nibs for garnish, but I can imagine a few other things to land on that pile of creamy goodness 🙂 (hint, hint, chopped nuts, dessicated or shredded coconut, berries, flowers, aaaah, there are so many options!).

For about 4-6 scoops you’ll need:

For the chocolate ice cream:
1 can coconut milk
1 cup (140g) dates, pitted and diced
1/2 cup (100g) FAIR-TRADE cocoa or cacao powder
1/2 cup water

For the chocolate sauce:
1/3 cup (45g) dates, pitted and diced
1/4 cup (50g) FAIR-TRADE cocoa powder
1/2 cup water

Preparation:

With the ice-cream maker:

For the chocolate ice cream, blend the ingredients to a fine cream. If you don’t have a very strong blender, let the dates soak in the fluid before starting.

Pour the blended mixture into the freezing bowl and churn until you are happy with the consistency. You might need to pop it into a container and into the freezer for a little longer if you like it to be more solid.

With the high-speed blender:

This needs a little more planning.

1. After you have blended the ingredients to a fine cream, pour it into a large plastic container until it is finger-thick high. Put the container into the freezer until the fluid is frozen.

2. Take the container out of the freezer, pop the frozen slab onto a plate. Break it or cut it into chunks.

3. Pop about halve of the ice chunks into the high-speed blender and pulse shortly. Then keep adding ice chunks and use the temper to press them into the blades, blending on medium speed. The ice ‘cream’ should be pretty smooth, but you’ll find it is a little more crunchy because of the ice crystals in it.

For the chocolate sauce:

Blend all ingredients to a fine cream.
