Vegan Potato Burger from ‘Der Veg ist das Ziel’ (Guest Post)

Today I invited Julia from Der Weg is das Ziel as guest authors. On her blog she shares vegan and vegetarian recipes that are gluten-free and without added sugar, as well as some info about sustainability. One of her most popular recipes is her vegan potato burger, which I would like share on my blog as well.

For 4 portions you’ll need:

For the burger
3 large potatoes
1large tomato
1/2 courgette (zucchini)
3 tablespoon quinoa flour
2 teaspoon sesame
pepper
salt
olive oil

For the avocado creme
1-2 avocados
1 tablespoon olive oil
1 teaspoon chia seeds
1 teaspoon sesame
1 garlic clove
ground paprika, sweet
salt
pepper

For the hummus
150g chickpeas (ready to eat)
1 garlic clove
3-4 tablespoon olive oil
1 teaspoon tahini
ground paprika, sweet
salt
pepper

Preparation:

It is best to start with the hummus, it’s so easy:
1. The garlic is chopped and minced.
2. Then you blend it with chickpeas, olive oil and tahini until creamy.
3. Add salt, pepper and ground paprika to taste…and done.

Avocado Creme
1. Blend scooped avocado(s), olive oil, chia seeds and sesame seeds in high-speed blender for 60 seconds. If you don’t have a blender, mash and mix it with a fork in a bowl.
2. Mince or chop the garlic and add to the mixture.
3. Add salt, pepper and ground paprika to taste.

Note: With some fresh lemon juice the avocado creme will stay nice and green while you prepare the rest.

Now the main part – the potato burger:
1. The potatoes are washed, peeled and grated into a bowl.
2. Add quinoa flour, salt and pepper and mix well.
3. Add oil to frying pan and form about 3 to 5 patties that are about the size of the burger bun.
4. Cook the patties in the frying pan on both sides until golden brown. Repeat until all burgers are cooked.
5. In the meantime cut the tomato into approx. 1 cm thick slices and the courgette into half a centimeter thick slices.
6. Fry those in an additional frying pan in some oil from both sides. Add salt to taste and sprinkle with sesame seeds.
7. Once everything is ready, built your burger to your liking.
